Tuna Tartare

Ingredients
1 lb ahi or yellow tail tuna, sashimi grade2 Tbsp good olive oil1 Tbsp tiny capers, drained1 Tbsp shallot, finely chopped1 Tbsp green olives, finely chopped1/2 tsp red pepper flakes1 tsp pine nuts, toasted and chopped1 lemon, quartered2 Tbsp fennel fronds, for garnish (optional)Salt and Pepper to taste
Directions
Chop the tuna into very small dice (1/4" or less) using a very sharp knife. Do not use a food processor. Mix in the olive oil, capers, shallot, pepper flakes, pine nuts, and olives. Season with salt and pepper. Garnish with fennel fronds, if desired. Serve with lemon wedges and toasted baguette or crackers. Serves 4.
