    * 1/2 cup of sliced sweet red pepper
    * 1/4 cup of sliced onions
    * 1/2 cup of halved green olives
    * 1 tbsp of olive oil
    * 2 tbsp of red wine vinegar

Directions

Simply mix all the ingredients together in a small bowl. Serve on whole wheat bread or pita with lettuce (optional). This recipe makes the filling for four sandwiches.
