Spanish Chicken and Vegetables

Ingredients
4 chicken thighs2 bell peppers2 tomatoes1 medium onion4 to 6 cloves garlic1/4 head cabbage3 tbsp cumin (ground)1/8 c Extra Virgin Olive Oil1 Chicken Bullion CubeSalt and Pepper to tasteOPTIONAL - 1 package Goya Sazon
Directions
Brown chicken thighs, garlic, and diced onions in olive oil. Blenderize tomatoes and green pepper until pureed. Once chicken is browned, add green pepper/tomato mix. Cover and simmer for 10 to 15 minutes, until somewhat reduced. Add wine, cumin, salt, and pepper. Cover and simmer approximately 45 minutes (until chicken leaves the bone easily). Add cabbage and cook 5 additional minutes. Serve over rice or whole wheat noodles. ANY veggie can be added in teh last few minutes to cook in the broth (asparagas, beans, zucchini, etc.).
