Lemonade Chicken--8 servings

4 boneless chicken breast halves, skin removed2 cloves garlic, minced2 Tbsp canola oil (or olive)6 oz. frozen lemonade concentrate, thawed1/2 cup water3 tsp chicken bouillon granules or 3 bouillon cubes3 small bell peppers, cut in strips2 tsp cornstarch1/4 cup cold water
Cut chicken into uniform strips.
In skillet over med-high heat, saute chicken and garlic in hot oil until chicken is no longer pink on the outside. Reduce heat to medium.
Add lemonade concentrate and 1/2 cup water and chicken bouillon. Cook 10 minutes or until liquid is reduced by half.
Add peppers. Cover and cook 5 minutes or until peppers are tender but still crisp.
In a small bowl, mix 1/4 water with cornstarch until smooth. Pour into skillet. Stir and bring to a boil and boil 1 minute or until liquid thickens.
Serve over rice.
