E2 Gingered Mushrooms, Bok Choy and Carrots with Soba Noodles

Ingredients
1/4 cup mirin2 tsp tamari1 tbsp brown rice vinegar2 tbsp cornstarch16 0z musrooms, sliced2 carrots, sliced1 tbsp ground ginger (or 2 tbsp fresh ginger)3 cloves garlic, chopped1 large bunch bok choy chopped inot 2-3 inch pieces16 ounces cooked soba noodles2 tsbp sesame seeds
Directions
Combine mirin, tamari, brown rice vinegar and cornstarch in a small bowl. Stir well and set aside. Stir fry the mushrooms in a nonstick skillet or work for 3-4 minutes. Add carrots, ginger, garlic and bok choy. Stir fry for 1 minute. Add 1 cup water and the mirin cornstarch mixture. Continue cooking until boy choy sotends and mixture thickens. Serve over soba noodles and garnish with sesame seeds.
