Chilled Strawberry Soup

Ingredients
Apple juice unsweetened 1 cup1 cup of water - divided2/3 cup of sugar (I use Splenda)1/2 tsp. ground cinnamon1/8 tsp. ground cloves2 cups fresh strawberries cut into small pieces2 cartons (8 oz. each) fat free strawberry yogurt2 drops red food coloring (optional)
Directions
In a saucepan, combine apple juice, 3/4 cup water, sugar or Splenda, cinnamon, and cloves; bring to a boil over medium heat. Remove from heat; cool. Place strawberries and remaining water in a blender or food processor; cover and process until smooth. Pour into a large bowl. Add apple juice mixture, yogurt and food coloring (if desired). Whisk until smooth. Cover and refrigerate until well chilled. Garnish with additional berries if desired. Riesling wine may be used for 1/2 the apple juice to kick up the flavor a notch!
