Fish Tacos with Tortillas de Nopal

4 ounce talipia (or hailbut)cooking spraysalt and pepper to taste2 Tortillas de nopal (corn tortillas made with cactus juice)1 tsp Enova cooking oil (or your choice)1 cup shredded lettuce2 lime wedges2 thick slices red ripe tomato (diced)slice and dice lol1/2 shallot minced4 T Mollies Secret Salsa (or your choice)1/4 cup Fat Free Shredded Cheese
Preheat the oven 400 degrees.
Spray a baking pan with cooking spray. Season the fish with the salt and pepper or season with your own favorite spices.
Cook 4 minutes. Turn over and cook another 4 minutes.
In the meantime shred the lettuce dice the tomatoes and mince the shallot. and cut the lime.
Put the oil in a saute pan and heat on medium high heat. Fry the tortillas on both sides until light brown and pliable. Just so that you can fold them.
Lay the tortilla on a plate and add half the fish, squeeze 1 lime wedge on the fish and add half the lettuce tomato and shallot and half the cheese. Top with 2 T salsa. Repeat to make the other taco.
You can also add your own favorite toppings like low fat sour cream, olives, and guacamole, use your imaginagion, but don't forget to add in the extra calories.
