Vegan: Potato & soyrizo tacos

1. in saute pan heat water heat to simmer
2. chop onion into small pieces and place in pan and simmer until almost translucent
3. Take leftover baked potato and cut into bit sized portions and place into saute pan w/onions
4. remove soyrizo from casing add to sauce pan.
5. mix ingredients until throughly incorporated
6. if needed add more water if needed to heat mixture all the way through
Topping:
7. chop tomato and avocado into small pieces [diced] place in bowl add juice of 1 lemon and salt, pepper and cilantro mix together
8. heat tortillas
9. add soyrizo mixture, about 1/2 cup to each tortilla and add topping to each. should make 8 or more servings.
10. enjoy
