Oats & Applesauce Muffins

Ingredients
2 cups quick cooking rolled oats2 cups plain fat-free yogurt2 cups Eagle Mills Unbleached Flour2 tsp baking powder1 tsp baking soda1 tsp salt1 cup packed light brown sugar1 cup unsweetened applesauce12 Tbsps Egg Beaters Refrigerated Egg Whites
Directions
Place oats in a bowl, add yogurt, mix well, cover with plastic and let sit for 2 hours at room temperature.

Preheat oven to 375 degrees. Grease 33 silicon muffin cups (using regular muffins cup will yield fewer muffins)

In a large bowl, stir together flour, baking powder, baking soda, salt and brown sugar. Stir in oat/yogurt mixture, add applesauce and eggs; mix well. Pour batter into prepared muffin cups.

Bake in preheated oven for 20 minutes, until a toothpick inserted into center of muffin comes out clean.
