Garlic, 3 cloves (remove)Onions, raw, .5 large (remove)Olive Oil, 2 tbsp (remove)Mushrooms, fresh, 1.5 cup, pieces or slices (remove)Canned Tomatoes, 1 can (remove)Chickpeas (garbanzo beans), 1.5 cup (remove)Beans, great northern, 1.5 cup (remove)Parsley, .25 cup (remove)Spinach, fresh, 6 cup (remove)Barley, pearled, cooked, .5 cup (remove)Oregano, ground, 2 tsp (remove)*Lemon Juice, .5 lemon yields (remove)Red Wine, 2 fl oz (remove)
Cook barley according to package directions.
Put the olive oil and garlic in a cold dutch oven or large, high-sided skillet, and warm over medium heat. Add onions and mushrooms and sautee until soft. Deglaze pan with red wine. Add the beans, barley, tomatoes, and spices. Stir and cover, bring to a boil. Once at a boil, add the spinach, and stir frequently. Cook until spinach is wilted, but not totally disintegrated, 5 minutes or so, to your taste. Squeeze the lemon juice in. Serve topped with feta or goat cheese and pine nuts. Makes 4 servings.
