20-Minute Turkey Chili

1 large onion, coarsely chopped1 fresh jalapeno pepper, seeded and minced1 clove garlic, peeled and chopped1 pkg. (1.25 oz.) chili seasoning mix3 Tbs. olive oil1 lb. cooked turkey, cubed1 can (14.5 Oz.) diced tomatoes 1 cup vegetable juice, like V-8 (I just add the whole small can it is a little more than 1 cup.) (I also use the spicy flavor to give it a little more of a kick)1 zucchini, cut into 1" cubes 1 can (15 oz.) kidney beans, drainedYou can substitute other vegetables for the zuchinni. I have used yellow squash, okra, and corn.
In saucepot over medium heat, cook onion, jalapeno pepper, garlic and chili seasoning in oil 5 min., or until soft. Add next five ingredients, cover and simmer 15 min., or till vegetables are tender.
Since this recipe is so low in calories (under 200 a serving)I usually add a dab of sour cream. YUMMY!
