Bok Choy Soup

Ingredients
2 cups bok choy, shredded1 cup sliced fresh mushroomsPAM or other cooking spray3 cups waterSeasonings to taste
Directions
Stir fry bok choy and mushrooms in a non-stick pot sprayed with cooking spray for about 2-3 minutes. Add water and bring to a boil. Cook uncovered for 2-3 minutes or until cabbage is soft. Season to taste.

Any type of greens can be substituted and other vegetables or noodles can be added if desired.
