Lemony Chickpea Quinoa Salad

1 cup chickpeas2 cups cooked quinoa1 cup diced bell pepper1 small-mec chopped tomato6 pcs artichoke hearts1 cup diced onion1 cup sliced cucumber1 clove garlic1 tbs capers
Directions
Cook quinoa according to directions.
Mix everything together; dress as desired. (Lemon juice recommended).

    The whole family loved it! I made it for my husband's lunch but he said that this salad is better as a side dish than as a meal. I made a dressing out of olive oil, lemon juice, oregano, cayenne pepper, garlic, salt and parsley. It was delicious! - 7/22/09
