Blueberry Cream Muffins

Ingredients
4 eggs2 cups Sugar1 cup vegetable oil1 tsp vanilla4 cups flour1 tsp salt1 tsp baking soda2 cups sour cream2 cups blueberries
Directions
preheat oven to 400*
Beat eggs and gradually add sugar. Continue to beat slowly and pour in oil. Stir in vanilla.

In seperate bowl stir flour, salt, and baking soda.
Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries.

Pour into greased or papered muffin tins.

    These were incredible. I make muffins for breakfast every Monday, and none have gotten the rave reviews these did. My husband gave them a rating of nine, adding that they would have been a ten if they had chocolate chips rather than blueberries. - 10/20/14

    I've been making this muffin recipe for awhile now and everyone loves it. The only problem is that one muffin has so many calories! And they're so good, it's really hard to eat just one. I noticed there are several other similar recipes with lower-cal substitutions, so I think I may switch. - 6/20/11

    Love this recipe! To lower the fat level I used two whole eggs and 2 egg whites, applesauce instead of oil, and fat-free sour cream. Still came out moist and rich tasting! My whole family loves them! - 4/9/10
