Leftover Roast Beef Gyros

Ingredients
8 oz. roast beef thinly sliced1 beef boullion cube1/2 cup water1 Tablespoon oregano2 large cloves garlic3 teaspoon olive oil4 Whole Wheat Kangaroo pita pockets1/2 cup feta cheese1 cup yogurt1/4 cup finely diced cucumber1/2 teaspoon salt1/4 teaspoon black ground pepper2 tomatoes cut into thin wedges1/2 cup onion diced4 cups of lettuce
Directions
Slice the leftover roast beef and put in non-stick saute pan with 1/2 cup of water, 1 boullion cube, 3 tsp. olive oil, 1 Tbl. oregano, and 1 of the large garlic cloves crushed. Simmer slowly until all liquid has been absorbed, about 30 min.

Meanwhile put 1 cup of yogurt in cheesecloth squeeze some of the moisture out the the yogurt. If you have time you can drain it over a cup for several hours and you will have what they call yogo cheese. You don't need it that thick for the tzatziki sauce. When you are done squeezing some of the moisture out of the yogurt, add 1/4 finely diced or grated cucumber, 1 large clove of garlic crushed, 1/2 tsp. salt and 1/4 tsp. ground pepper. Refrigerate until ready to use.

Fill each pita pocket half, with1 tablespoon feta cheese, 1 oz. seasoned roast beef, lettuce, onion, and tomatoes. Top it off with 1 Tbls. of the yogurt and cucumber tzatziki sauce.

If you aren't overly hungry 1/2 a pita would really be plenty, which would make your sandwich under 200 calories.

    Sodium is way to high due to bouillon cube. I used a vegetable broth cube which was lower in sodium. Otherwise, I liked the recipe for using leftovers. - 9/14/10

    First of all I have never had a "real" gyro, because I don't eat lamb. I thought these were very tasty and satisfying. My husband who really likes gyros thought these were great! Even my picky preschooler ate them. A great way to use leftovers! - 3/3/10
