Makes approximately 4, 1-cup servings. Peel the cucumber, chunk the tomato and cucumber, and finely dice the raw onion. My family likes to add bell pepper as well, but I just don't enjoy it. Add 1/2 cup of balsamic vinaigrette or Italian dressing (I like Newman's Own Light Balsamic Vinaigrette), and stir thoroughly. It tastes better if refrigerated overnight before serving, but can be served within 30 min of preparation.
