Red Lentil Soup

Ingredients
1 T Olive Oil1 Cup chopped onion1 Cup Chopped celery1/2 Cup chopped carrots2 cloves of garlic (chopped)1 1/2 Cups of Red Lentils (1pound)4 Cups chicken stock3 Cups water1 Can diced tomatoes1 Cup MultiGrain Rotini1 T dried Thyme(optional) bay leafsalt and pepper to taste
Directions
Makes 15 1/2 cup servings

In a large heated pot put the olive oil, onion, garlic, celery, and carrots over medium-high heat. Cook for 5-8 minutes or until onion starts to sweat. Add lentils, tomatoes, chicken broth, and water. Add thyme, (bay, salt, and pepper to taste). Bring to boil, then simmer for 20 minutes. Add 1 cup of pasta. In a medium boil, cook for another 10 minutes. Lentils will make soup very creamy. Enjoy.
