Taco Soup

Ingredients
16 ounces extra lean ground beef 1 small yellow onion, chopped (about 1/2 cup)1 recipe Taco Seasoning1 (14.5 ounce) can no salt added tomato sauce1 (14.5 ounce) diced tomatoes with green chilies1 (14.5 ounce) dark kidney beans, drained and rinsed 1 cup frozen or canned corn kernels1/2 cup chickpeas, drained and rinsed, mashed
Directions
Brown the ground beef and onion in a large saucepan over medium heat. Blot any excess grease with a paper towel, then add the taco seasoning. Cook for one minute, then add the tomato sauce, diced tomatoes, kidney beans, and one cup water.

Reduce heat to medium-low, and simmer for 10 minutes.

Add the corn and mashed garbanzo beans, and simmer five more minutes.

Serve immediately. Makes six (1 cup) servings.

    I haven't made this just yet, but did want to point out something. In the video, Chef Meg adds the juice of 1/2 a fresh lime, just before serving. I did not see that listed here. This looks so yummy. I hope I have everything so I can make it tonight. - 8/11/09

    Good catch! We added that to the notes section. It's really optional, but it does boost the flavor.

    I made this recipe without any alterations. It is more of a Taco Stew, but it's delicious. We had it with "Elaine's Healthy Cornbread" and it was a hit with my family. My husband had 3 servings. Can't wait to make it again. - 9/24/09

    I would make this but substitute Morningstar Crumbles for the ground beef. Also, when I do use ground beef, instead of merely "blotting," I drain all the fat and then rinse the cooked meat while it's in a colander. Meg should advocate that. - 8/7/09

    i loved this. i couldn't believe after i cleaned the pot there was absolutely no greasy residue. it had so little fat, but so much flavor. i was really skeptical of using the mashed garbanzo beans but youu couldn't even taste them at all. i am looking forward to the next chef meg recipe. - 8/15/09

    Video adds 3 cloves garlic in with taco seasoning.
    Sounds delish! Would make a great Sunday lunch if made ahead of time. I'd add cilantro leaves to soup towards end of cooking time... about the time you add lime juice. Then top with avocado slices instead of cheese for a healthier fat. - 10/22/09

    Every one of my kids loved this soup, and so did I! That earns it 5 stars. I used a 19 oz can of (original) diced tomatoes. The ones with chilies are not available here. I also used the packaged taco seasoning, the 40% reduced salt version. I didn't drain the kidney beans. - 1/10/10

    I made this last night and it was so tasty! I didn't have the green chiles, and I used a can of enchilada sauce instead of the tomato sauce. I also used black beans instead of kidney. I used Emeril's Southwest seasoning and put some cilantro in while it cooked. SO tasty! Comfort food! - 5/20/10

    I used a taco seasionong mix Old Elpaso original. We really liked it. I'm going to try Chef Megs taco seasoning next time. I also add a little water to thin the soup down a bit. Incredible flavor. We both love this one. - 10/31/09

    Looks tasty and I plan to try it: but the recipe is sloppily put together -- it references the taco seasoning that isn't given here (but a reviewer supplied it) and it includes 14 oz tomato sauce but then says to add the tomato paste ?? someone mentioned it might/mightnot have lime? - 1/5/10
