Tomato Basil Soup - No Cream

Ingredients
1 - Whole Peeled Tomatoes Canned (6lb 6oz can)1 1/2 - Yellow Onions 3 tbls - Crushed Garlic (McCormick Jar)1/3 cup - Basil Fresh (chopped) Or 1/4 cup Dry Basil1 tbls - Ground Oregano1 tbls - Italian Seasoning3 teas - Ground Black Pepper1/2 tbls - Crushed Red Pepper Flakes2 tbls - Butter1 tbls - Extra Virgin Olive Oil
Directions
Peel Onions, Slice thinly then cut slices into smaller pieces
Melt butter in large pot add olive oil over medium heat
Add onions & garlic, saute until softened
Add all the rest of the ingredients
Bring mixture to a slow boil then reduce heat to simmer

All of the spice measurements are to taste. Add more or less as you like. The red pepper should added in smaller quantities at a time for taste, the spiciness of the red pepper increases as the soup cooks.
I also smash the tomatoes as they cook. the soup can be pureed.

This makes approx 12 servings at 1 cup each. I add 1/4 cup Skim milk Ricotta cheese to the bowl then ladle the soup over it. The Ricotta cheese adds protien
