Chicken Souvlaki

Ingredients
2 T olive oil1 T lemon juice1 1/2 T dried oregano 2 cloves garlic2 T minced onion1 1/2 t kosher salt1 t fresh ground black pepper1 lb boneless, skinless chicken breasts, cut into 1 1/2 " cubes5 skewers - if using bamboo skewers, be sure to soak them in water first
Directions
Whisk together all ingredients except for chicken. Transfer marinade to a plastic zip top bag and add chicken. Shake to coat well. Refrigerate at least 30 minutes, or up to 12 hours.

While grill or grill pan is heating up, divide meat evenly among skewers.

Place skewers on the grill, being sure to hang any extra wooden part off of the edge (so they don't catch fire.) Grill for 4-5 minutes on each side, or until internal temperature is 165.

Serve with brown rice and a little tzatziki, if desired. Yum.
