1 CHICKEN BREAST8 LARGE SHRIMP1 SMOKED TURKEY SAUSAGE , CUT INTO LITTLE RINGS1/2 CUP CHOPPED ONION1/2 CUP CHOPPED CELERY1/2 CUP CHOPPED RED PEPPER1 CUP SLICED MUSHROOMS1/3 CUP SHORT GRAIN RICE1 TSP ITALIAN SEASONINGPINCH OF SAFFRON1 CUP V8 VEGETABLE JUICE1/2 CUP WHITE WINE1/4 CUP WATERSALT AND FRESH GROUND PEPPER, TO TASTE1/2 CUP FRESH OR FROZEN PEAS

CUBE CHICKEN IN TO BITE SIZE PIECES. SAUTE IN OLIVE OIL ALONG WITH THE ONION, CELERY AND RED PEPPER. COOK ABOUT 5 MINUTES. ADD RICE TO PAN ALONG WITH THE SAUSAGE AND COOK A FEW MINUTES OR UNTIL RICE START TO BROWN SLIGHTLY. ADD THE SEASONINGS. POUR OVER THE JUICE, WINE AND WATER. COVER AND COOK ON STOVE TOP ABOUT 15 MINUTES. REMOVE COVER ADD PEAS STIRRING IN. COVER AND LET THE PEAS HEAT THROUGH. ENJOY.
SERVE ALONG WITH A NICE SALAD.
