Doraji Muchim (Spicy Bellflower Root)

170g (1.5 cup) Dried Bellflower Root (DoRaJi), pre-sliced0.5 Cucumber2.5 tbsp Red Pepper Powder (Chili Powder)3 tbsp Sugar3 tbsp Rice Vinegar (or Apple Vinegar)0.5 tbsp Garlic, minced1 tbsp Scallions (Green Onions), chopped0.5 tsp Salt1 tsp Sesame Oil0.5 tbsp Sesame Seeds, white, dry-roasted
Soak about a handful of bellflower roots in water at least over night to rid the bitter taste. Wash several times before use.
Slice cucumber in half, cut in diagonal slices.
Mix together bellflower roots, cucumber, chili powder, sugar, vinegar, minced garlic, finely chopped green onions, salt, and sesame seeds.
Add sesame oil, mix well.
Makes 8 servings.
