Sadiqah's Carrot Salad

Ingredients
2 cups shredded carrots1 20-oz can of pineapple tidbits in pineapple juice, drained (I used crushed pineapple)1 cup shredded coconut (I used sweetened but will try unsweetened next)3 oz. cream cheese, softened1/2 cup mayonnaise1/2 cup cool whip
Directions
Mix carrots and pineapple. Cover and refrigerate overnight. When ready to serve: add 1 cup coconut.

To make the dressing: Mix the softened cream cheese, mayonnaise and cool whip together. Add to salad and stir to mix.

Makes 8 1/2-cup servings
