Simply Delicious Potato Salad #2

Ingredients
2 1/2 cups potato, diced2 hardboiled eggs1/8 cup onion, chopped (approx. 1/4 medium onion)1 tbsp yellow mustard1/2 cup reduced fat mayonnaise1/2 tsp salt1/4 tsp pepper1/8 tsp paprika1 tsp basil
Directions
* Boil chopped potatoes until just cooked.
* Boil and shell eggs. Remove yolks from cooked eggs, place in mixing bowl, mash with spoon.
* Dice egg white, chop onion, add to bowl. Mix lightly.
* Add mayonnaise and mustard. Mix. Add spices and mix thoroughly.
* Add potatoes, fold into mix lightly until even.
* Refrigerate and serve!
