Ingredients
1 mango, diced.25 cup purple onion, chopped1 tomato, chopped3 scallions, chopped1 garlic clove minced1 red bell pepper, sliced into strips1 tsp freshly grated ginger root1 15 oz can Black Beans or 2 cups 1/2 juice of lime1 cup quinoa, best if made ahead1 Chicken breast, skinless, boneless (about 6 oz) best if prepared in advance1 cup baby spinach2 pita
Directions
Combine all ingredients through Lime juice and toss.
Add quinoa and diced chicken breast
Place spinach in pita and pack with salad
