Ingredients
1/2 C Oat Bran1 Cup Whole Wheat Flour1/4 Cup Ground Flax seed1 tsp Baking Soda1 1/2 Tsp Baking Powder1 tsp Ground Cinnamon1 tsp Ground Nutmeg1/4 Cup Egg Beater1/4 Cup Prune Puree for Baking2 Small Zucchini 8 Tlb Splenda Brown Sugar1/4 Cup Chopped Pecans1/4 Cup Chopped Almonds1/4 Cup Chopped Dates
Directions
Chop Zucchini in food processor. Add that & all other ingredients together in bowl. Mix by hand until all ingredients are blended. Spoon batter into muffin lined cups. Bake @350 22 to 25 minutes. Makes 12 Servings.

    I added craisins instead of dates and added 1/2 cup of pecans omitting the almonds. Fabulous!! Could go with less sugar as they are rather sweet. - 10/25/09

    Yummy! I wasn't sure what Oat Bran was so I used Quick Oats and I used applesauce instead of the Prune puree because I forgot to buy it. - 8/13/09
