Strawberry Romaine Salad

Ingredients
SALAD:Romaine Lettuce Head OR Bag of Hearts of Romaine (Fresh Express/Dole)Head of Boston lettuce OR Bag of lettuce of choice1 pint fresh strawberries, quarteredPecans, 1 cup, choppedMonterey Cheese, 1 cup, shreddedDRESSING:Olive Oil, 1 cupGranulated Sugar, .75 cup (can substitute Splenda, but is not as easy to mix)Red wine vinegar, 0.5 cup2 cloves garlic, mincedSalt, .5 tspPaprika, .5 tsp
Directions
Dressing: Combine all ingredients in a large jar or bowl with lid. Cover and shake vigorously, until sugar is mostly or completely dissolved. May store for up to 1 week in fridge.

Salad: Cut or tear lettuce into bite-sized pieces. Add strawberries, cheese, and nuts. Toss or shake to mix. Re-shake dressing and add just before serving. Toss to mix.

Makes approximately 20 half-cup servings -- depends on how you make/use the lettuce!
