Ingredients
2 cans black beans rinsed and drained 1 can tomatoes minced1 ripe red tomato diced3 teaspoons minced garlic1 jalapeno chopped and seeded 1 cup carrots3/4 cup celery1 1/4 cup onions1 small diced red pepper1 cup carrots1 cup v8 juice1 roast red pepper1 tbsp grape seed oilSweat vegetables,in grapeseed oil, add beans, tomatoes and juice, bring to a boil, reduce heat to low and cook 30 minutes. Top with Cilantro and serve
