Ingredients
5 eggs1 T water1/4 cup salsa1 T butter1 T olive oiltortilla chips1 onion, chopped4 oz diced green chiles2 medium tomatoes, chopped1/2 avocado, chopped & sprinkled with lemon juice2 T fresh cilantro1 cup cheddar cheese
Directions
In a small bowl lightly beat together eggs, water, and salsa. Set aside. Warm butter and olive oil in skillet. Add tortilla pieces or chips. Add onion and saute until transparent. Stir in chopped green chiles. Pour egg mixture into Skillet, scramble until eggs are done. Add in tomatoes, cheese, cilantro and avocado. Stir well.
