1/2 c canola oil3.9 oz blueberry applesauce1/4 c packed brown sugar1/4 c sugar1/4 c honey3/4 c Splenda2 eggs1 tsp vanilla1 3/4 c flour1 tsp baking soda1 tsp cinnamon1/2 tsp salt3 cups dry instant oats1 1/2 c dried blueberries1 c chopped pecans
Preheat oven to 350 degrees. Beat together oil, applesauce, sugars/sweeteners, eggs, and vanilla. Add flour, baking soda, cinnamon, and salt and mix well. Stir in oats, nuts, and blueberries. Drop by rounded teaspoonfuls onto parchment paper-covered baking sheet. Bake 15 minutes. Makes 3 dozen cookies.
