225g Glutafin Gluten Free Wheat Free Multipurpose Fibre Mix,1 tbsp baking powder1 tsp ground cinnamon45g of splenda 45g of butter2 medium apples unpeeled and grated185ml soya light milk
makes 12 medium sized muffins
1. Preheat the oven to 200 degree Celsius.
2. Line muffin tin and paper cases (recipe makes 12 muffins)
3. Sift the flour, baking powder and cinnamon into a bowl
4. Add the remaining ingredients and mix well. You will have a thick wet dough
5. Spoon into the muffin tin. Nearly filling each paper case.
6. Bake in the oven until risen, pale golden colour and firm to touch
7. Transfer to wire rack to cool before serving.
