Healthy Hash Browns

Ingredients
1 Sweet potato (grated)1 Medium Scallion (diced)dash Salt (sea salt)dash Black Pepper 2 tsp Margarine (becel light)
Directions
Peel and grate sweet potato and set aside.
Peel and dice Scallion.
Heat Margarine in a large non stick pan, add scallion cook on high until scallion starts to cook, reduce heat and then add Sweet potoato, salt and pepper mix well. Stir regularly when mixture starts to brown remove from heat and serve.
