Ceviche

Ingredients
1# imatation crab1# salad shrimp1 large onion, diced small2 T finely chopped cilantro1 avocado, diced1 T lemon juice2 cups small diced tomato (about 3 roma tomatoes)1 jalapeno, finely diced (or to taste)salt to tastepepper to taste1/4 t garlic powder
Directions
Cut ingredients small and stir together. Refrigerate until ready to eat.

Makes about 8 cups. 3/4 cup equals 3 ounces of protein. I eat it over lettuce for dinner or lunch. Makes 11 servings. Use 1/4 cup for dip.

Keep unused portion refrigerated.
