Green chicken curry

8oz (230 grams) Chicken breast, cut into bite sized cubes7oz Lite coconut milk 1 tablespoon green curry paste2 scallions, coarsely chopped.5 chicken bouillon cube.5 tsp saltsmall handful fresh cilantro, choppedcooked rice or rice noodles, to serve (not added to nutritional value)
Spray non-stick wok (or saute pan), heat. Add the scallions and stir fry over medium-high heat for 30 second, or until scallions start to soften.
Add the curry paste, coconut milk, and stock cube and bring gently to a boil, stirring occasionally. Add the cubed chicken, half of the cilantro, and the salt and stir well. Reduce the heat and simmer gently for 8-10 minutes, or until the chicken is cooked through and tender.
Stir in the remaining cilantro. Serve immediately with rice or noodles.
