Spinach, Tomato, Mushroom & Feta Omelette

15g (or handful) of baby spinach20g feta cheese, crumbled1 small tomato (60g), sliced1 large mushroom (20g), sliced3 eggs (2 yolks removed)1 small onion1 clove garlic1 tsp olive oil1/2 tsp saltpepper to taste
Whisk whole egg and 2 egg whites in bowl seasoning with salt and pepper.
Put oil in pan and sautee onions and garlic.
Pour in eggs, pulling the sides of the omlette inwards and letting the liquid in the centre run ove the edges.
Layer half the omlette with spinach, tomato and mushrooms. Crumble feta on top.
Fold omlette in half and flip over, cooking other side until feta is melted.
