Grandma Kay's Baked Cheesecake

Crust: 1 pkg low-fat graham crackers, crushed6 tbsp. butter, melted2 tbsp. sugarCake2 16-oz pkgs Neufchatel (lite cream cheese)1 cup granulated sugar1 tsp. vanilla1 cup skim milk4 large eggs, separatedpinch saltpinch cream of tartar
Serves 8-10
Preheat oven to 350.
For crust, crush graham crackers into fine crumbs, add sugar & butter, then mix. Press into the bottom of a 9" springform pan (no need to grease or flour pan).
For cake, cream together neufchatel & sugar until well blended. Add vanilla & egg yolks and beat until well blended. Mix in skim milk until well incorporated.
In a separate container, whip egg whites with a pinch of salt & cream of tarter until stiff.
Gently fold beaten egg whites into creamed mixture 1/3 at a time until well blended, being careful to not destroy the fluffy texture of the egg whites.
Pour batter into springform pan on top of crust. Place pan on top of jelly roll pan / cookie tray and place in oven on medium rack. Bake for 60-90 minutes until the center of the cake is set. Turn off oven and crack door to allow heat to escape slowly while cake cools to room temperature.
Serve plain (my favorite) or top with fruit, chocolate syrup, whipped cream... Pretty much anything goes!
