Pickled Squash

Ingredients
8 cups sliced squash2 cups thin sliced onions2 cups thin sliced green peppers1 large jar sliced pimentoSyrup:3 cups sugar2 cups vinegar2 Tbls celery seed2 Tbls mustard seed
Directions
Soak squash in 3 quarts water salted with 2/3 cup salt for 1 hour. Pour off brine.
Make syrup. Bring to a boil. Drop squash, onions, green peppers and pimento in to syrup and bring to a boil again. DO NOT COOK! Remove from heat. Put in sterile jars.
Makes 4 pints. Each serving is 1/4 cup.
