Creamy Chicken and Spinach Bake

Ingredients
10 ounces Fresh Express Baby Spinach 1/2 cup fat-free sour cream1/2 cup light mayo1 cup shredded mozzarella low moisture part skim cheese1/4 cup Parmesan cheese 2 cups diced cooked chicken breast 2 tsp garlic powder
Directions
Preheat oven to 350 F.

Steam spinach, then drain any excess water.

Combine sour cream, mayo, cheese, and garlic powder.

Pour half into a baking dish coated with cooking spray.

Top with the chicken and spinach, then the remaining cheese mixture.

Bake for 45 minutes.

Makes 6 servings (1 cup)

    I made this the other night, adding 1/2 chopped sauteed onion. I also substituled greek yogurt for the sour cream. This made cal=245.2, Pro=34.1, sod when up=993.9. It was just as amazing. - 1/7/10

    I used plain yogurt for the sour cream, added an 8oz can of mushrooms and a 15.5oz can of diced tomatoes with garlic/onions. Without these additions, would have been too bland. - 9/28/09

    So good ! My whole family loved this.. I subbed no fat greek yogourt for the sour cream, and sautéed an onion, and sautéed fresh spinach before mixing with the chicken. I also used the ready oven roasted chicken strips from Costco which save a lot of time/prep. Delicious.. the 3 of us ate it all - 9/1/10

    Sooo Good! I will definitely make this again. I sub'd the sour cream for greek yogurt and added a bit more Mozzarella on top. I also used zucchini, yellow squash, mushrooms, and onion as filler with the spinach. - 6/22/10

    This recipe is great! I used 20 ozs of fresh spinach instead of the frozen kind. Also substituted the sour cream for non-fat cottage cheese, added some sweet peppers and mushrooms, served with couscous/rice/pasta- amazing! My boyfriend said he felt like he was eating at a restaurant! - 12/1/10

    Wow..I just made this and it was deelish! I did change some things . I cooke the cubed chicken with garlic, onion, tumeric, a bit of sea salt & lemon pepper. Then I added fresh spinach, green peppers and tomatoes. Greek Yogurt instead of sour cream, grated parmesan cheese & minced garlic in mix. - 4/25/10

    This was very good. I put it in the crockpot instead of the oven because I needed to be away. Probably won't do that again. The spinach was a bit bitter. And I used leftover turkey instead of chicken. I'll definitely make it again. - 12/3/10

    Finally got around to making it... it was really good... even my husband loved it! I served it over no yoke noodles. The only thing I cut down on was the parm cheese (One cup seemed like a lot) but it was still good and rich enough. - 5/16/10

    We made this last night and it was great! However, using an 8" pie plate, I could barely get 4 dinner size servings, let alone 6 servings. Next time I might add an extra package of spinach to stretch it further. - 7/9/09

    I love it. I did add onions and mushrooms and extra spinach (my pkg was larger), baked in a 2 qt dish. Didn't cook chicken for 30 min before baking. Just stir-fried in pam w/ Mrs. Dash for a few minutes - saved a lot of cooking time. - 7/22/09

    Did a little different: used can spinach, pre-cooked chicken strips diced up and added diced tomatoes and some panko bread crumbs. I don't cook much but my husband said he liked it atleast three times while eating it! WOHOOOO!!! - 7/18/09
