Spinach, Onion, and Green Pepper Omelette

Ingredients
* Spinach, fresh, 1.5 cup * Onions, raw, 1 cup, chopped * Green Peppers (bell peppers), 0.5 cup, chopped * Egg, fresh, 3 large * Butter, salted, 1 tbsp * Olive Oil, 2 1tsp * Cheddar or Colby Cheese, Low Fat, 2 slice (1 oz)
Directions
Chop spinach
Sautee the spinach, green peppers, and onions in olive oil
Set aside
Mix eggs and set aside
Heat olive oil in skillet, pour eggs in
When eggs are firm, place veggie mixture and 1 slice cheese on top.
Fold over
Place omelette on plate- pour veggie mixture over and the remaining cheese.
