Succotash Omlet

Ingredients
1 Tbs. Cranola oil or EVOO1 small onion, chopped1 Red Pepper, chopped1/2 c. baby lima beans1/2 c. corn1/2 tesp. Thyme, dried or fresh1/2 tesp.Salt, optional1/4 tesp. pepper1/8 tesp. Cayenne or red pepper1 c. egg substitute or 4 large eggs, beaten until they are foamy2 Tbs. shredded low fat cheese
Directions
Heat oil, add onions and vegys, cook until tender.
Add thr seasonings, stir well and smooth out into a circle in fry pan. Pour beated eggs or egg substitute over vegetables, tilting pan to spread the eggs. Cook until almost firm, then add the cheese and continue cooking until firmness is reched.
Slide onto a large plate and cut into 4 triangles.
