Apple Pie for Breakfast

1/2 cup 2% cottage cheese, not packed2 T light whipping cream1 scoop plain soy protein powder (low carb)1 medium apple1 tsp dark brown sugar, unpacked2 tsp hot waterdash cinnamon
Makes 1 serving
Make "ice cream" ahead of time:
Place cottage cheese, protein powder and whipping cream in a deep bowl. Using a hand mixer, mix until fairly smooth. Scoop into container, cover and chill until very cold or you can freeze it for half an hour, then stir just before serving.
"Pie Filling"
Mix the sugar, cinnamon and hot water together. Peel the apple (optional), cut into wedges and cut each wedge in 3. Place apples in bowl, add sugar mixture and stir well. Cook on high for 4 mins. in microwave, covered, or until apples are soft.
Scoop "ice cream" into a bowl and spoon the apples over. Enjoy!
