Ingredients
1 box flavored couscous (garlic or Parmesan), cooked1 can chick peas1 red bell pepper, finely chopped1/2 Vidalia onion, chopped1 English cucumber, peeled, seeded, and finely chopped1 tomato, chopped1/4 c. fresh parsley leaves, chopped1/2 c. crumbled feta cheeseSalt and freshly ground black pepper1/4 c. olive oil 2 to 3 limes, juiced
Directions
In a large bowl, toss all the ingredients with the olive oil and lime juice, to taste.

    Love this salad! I agree with previous post. This makes a big recipe. If you are making it into only six servings they would be very large! - 6/14/14

    My husband has been making this for our family for years...I do have to talk him into it, since it is a bit time consuming since he cuts up everything rather than using a food processor.

    I think the recipe makes more than 6 servings! - 7/1/12
