Chili Lime Tofu

Ingredients
700 grams firm tofu300 grams spinachChili Lime Sauce2 tbsp raw sugar1/4 cup light soy sauce2 tbsp lime juice1/2 tsp chili flakes1 clove garlic, minced4 tbsp cilantro, chopped
Directions
Prepare the sweet chili lime sauce by whisking all of the ingredients together until the sugar and salt is dissolved. Drain tofu and cut it into small triangles. Brown tofu in a hot pan, add spinach and cook until wilted. Add the sauce and stir to coat. Let simmer until sauce is desired consistency.

    This was my first time cooking tofu, and I'm not sure I did it perfectly but it tasted pretty great! Our only suggestion is upping the spiciness -- we'll do at least a teaspoon of pepper flakes next time (we're people who enjoy medium salsa on a regular basis). Thanks! - 9/1/09
