Easy green chile chicken enchiladas

Ingredients
1.5 lb chicken breast, cooked and shredded2 cans green chile verde salsa (32 oz total)3/4 cup milk8 oz low fat shredded cheddar cheese5 garlic cloves, diced12 corn tortillas
Directions
Preheat oven to 350 degrees.


Mix salsa and milk. Add 1/2 cup of this mixture to the shredded chicken and garlic.


Wrap the tortillas in a damp paper towel on a plate and microwave for 1 minute. Dip one tortilla in the salsa and add in 1/3 cup chicken. Roll and place in a greased 9x13 pan. Repeat with the rest of the tortillas.


Cover with the rest of the salsa mixture and top with shredded cheese. Bake for 40 minutes.

    I halved the recipe and used about 1/4 the cheese but still ended up with a quick, warm main dish. I served with homemade pico de gallo and seasoned pinto beans. - 10/8/15
