Tuscan Meatloaf

Ingredients
2 lb extra lean ground beef1 cup sundried tomatoes soaked in hot water and chopped2 Tbsp Minced Garlic1/4 C. chopped fresh basil1/2 C. plain bread crumbs2 large eggs, beaten1 oz Pancetta
Directions
Mix together all ingreadients except pancetta and form into a loaf. Wrap loaf in Pancetta then wrap entire loaf in parchment paper. Place the parchment wrapped loaf in large baking pan and bake at 350 degrees F for 45 minutes or until a meat thermometer inserted into the middle of the meatloaf registers 165 degrees F.
