Ingredients
4 c. cooked bulgar wheat2 cups chopped parsley1 can chickpeas, drained & rinsed1/2 c. diced raw jicama16 black olives1 clove garlic1/4 c. lemon juice2 Tbsp. olive oil
Directions
Mix all ingredients. Chill for an hour or so before serving, for flavors to mingle.
Makes 8 1-cup servings.
