Whole Grain Pancakes

2 cups Whole Wheat Flour1/2 cup All purpose flour1 cup Quick Oats1/4 cup Flax Seed Meal1 tbs Baking Powder1/4 cup Packed Brown Sugar4 medium eggs (slightly beaten)3 cups 2% Milk 1 Tbs Vanilla Extract
Mix all the dry ingredients together with a whisk to ensure no lumps of brown sugar.
In a separate bowl mix the milk, eggs, and vanilla extract together.
Add the wet ingredients to the dry ingredients, using a whisk to remove any lumps. Add more milk to acquire the desired consistency. The recipe as above is pretty thick, but the pancakes are very fluffy.
Cook on an electric skillet set to 250 degrees. The lower temperature helps the oats to cook all the way, but it does take longer to cook.
Makes about 30 1/4 cup full pancakes.
