Lower Carb Potato Salad

Ingredients
1 medium russet potato (or equivalent sized potato of choice)1 1/4 cups cauliflower floretsup to 1/4 cup plain yogurt (or 2 tbsp yogurt and 2 tbsp mayo)up to 2 tbsp prepared mustard1 dill pickle spear, diced3 tbsp red onion, diced1 small-medium stalk celery, finely diced (opt)dillbasiloregano
Directions
Steam potato and cauliflower until tender, about 10 minutes. Mash lightly with fork or potato masher. Mix in a bowl along with remaining ingredients - add most/all ingredients to taste.

let chill completely before serving... the flavor develops as it gets cold!!
