Anise Pizzelle Chex Mix

9 cups Rice Chex6 Tbsp margarine (you can use butter)1 tsp vanilla1 tsp anise extract1.5 cups powdered sugar
Put the Chex in a big bowl and set aside.
Melt the margarine in the microwave, then blend in the vanilla and anise extracts. Pour over the Chex and toss until coated.
Sprinkle the powdered sugar on a little at a time and toss until coated (or you can put the Chex and sugar in a big bag and shake until coated).
If still warm, spread on a piece of wax paper until completely cool. Then place the mix in a sealed container. The flavor is best after a day or two.
Note: if you want even more anise flavor, you can add a Tbsp of anise seeds. Put them in the microwave with the margarine in a covered dish (the seeds open when heated and might jump).
Makes about 27 servings (1/3 cup or handful).
