The best Oatmeal Banana Muffins (and the're low fat too!)

-1 1/2 Cups All Purpose Flour-1/2 Cup Whole Wheat Flour-1 Cup Quick Oats (dry)-1/2 Cup Steel Cut Oats plus 1/2 cup Water-1/2 Cup Splenda-1/2 Cup Brown Sugar (Packed)-2 t Baking Soda-2 1/2 t Baking Powder-2 1/2 t Ground Cinnamon-1/2 t Ground Nutmeg-1 t Salt-1 T Cooking Oil-4 Medium Size Eggs-1 Cup Cinnamon Applesauce-2 1/4 Cup Mashed Bananas
-Combine steel cut oats and 1/2 cup water. Microwave oats and water for 30 seconds. Stir and continue cooking in microwave for an additional 30 seconds. Set aside.
-Combine all dry ingredients in large bowl and mix
-Add eggs (slightly beaten), oil, bananas, steel cut oats and applesauce
-Stir until mixed thoroughly
-Grease muffin tins and fill 3/4 full
-Bake 30 minutes at 350 deg.
